I am going to be brewing two lagers next week - a Helles and and oktoberfest.
Helles - basically 90% pilsner malt, 10% cara pils
Oktoberfest - about 50/50 pilsner and munich/dark munich/caramunich
What are thoughts on the necessity of using step mash or decoction for either/both of these beers? Will a simple infusion mash work (well)?
