I have cultured the dregs from JP's La Roja and want to keep them healthy. Right now I have the culture in a 1/2 gallon milk jug. The jug has a nice pellicle on it after about a month now.
1) How often do I have to feed it?
2) Should I dump part of the liquid when I do ...and if so do i want to kick the sediment back up into suspension?
3) When I want to pull from this starter to add to beers should I kick up the sediment or just take some of the liquid? I am not sure if bugs floc like standard yeast or they would all be in suspension.
