But doesn't this look yummy!!

I brewed a simple rye saison a month ago and I opened it today to bottle, found this pellicle. I'm going to pitch a small amount of my house culture from a vial, let her rest a few months and ride it out. Taste of mild funk and spicy rye right now.

In, the mean time, switching out some hoses and such.

Oh I love me some funky beers. It just was not intended in this one.

I was thinking about adding some fruit to the mix. What would go well with the subtle spicy rye, and funk? This is not a huge saison it's kind of delicate and already fermented down to 1.002/1.004 with the french saison yeast and bugs.

coriander/pear? There is a micro brew around here that likes to use white pepper. That may actually cause your tastebuds to explode with the crazy number of flavors, but might be fun.

I like the peppercorn idea, although I'd go with the one that's less spicy and more fruity. I forget which, maybe green?

Pear, apricots, and peaches are rolling through my mind.
