This is the recipe I've come up with so far:

5 gallons total

White Labs WLP 300 Hefewiezen Ale Yeast

1.50 lbs Briess Bavarian Wheat Dried Malt Extract 60 min
1.50 lbs Briess Bavarian Wheat Dried Malt Extract 60 min
1.00 lbs Light Crytal Malt 60 min

1.00 oz citra Pellet Boil 60 min
0.50 oz Hallertauer Gold (German) Pellet Boil 30 min
0.50 oz Hallertauer Gold (German) Pellet Boil 10 min

2.00 lbs Wild Flower Honey (Flame Out) Boil
1.00 oz 3 lemons sliced (5 Minutes) Boil
2.50 oz Grated ginger root (5 Minutes) Boil
0.17 oz Irish Moss boil 15 Min. Boil

How do you guys think this would turn out?

Efficiency: 70%
Original Gravity: 1.046
Final Gravity: 1.012
ABV (standard): 4.45%
IBU (tinseth): 33.62
SRM (morey): 3.24

This gives a light colored brew with 4.5% ABV, and about 33 IBU. It is a little too bitter "for style" if you consider it a Hefe, but it should be a very drinkable beer.

I've already had a lemon ginger hef and it had great potential I just think that i'd like to modify it to my tastes. So I want it a little low on the esters and definitely not too strong on the ginger. If anyone has any experience in this field I'd appreciate the input. As far as hops go I do want it to be a mildly traditional American Hef so I'll probably lay off the IBUs.

Why citra for bittering and then hallertauer? Also crystal extract as a base malt seems weird.

Honestly I just went online and looked up a lemon heff recipe and added the ginger part. Any different recipes would be greatly appreciated

I have a Tripple (the second run tested at 1.056) Lemon Ginger Honey Wit in the secondary now. AG 18 lbs with fresh lemon zest, candied ginger and orange blossom honey. When the WLP 410 quit, I racked from primary and pitched WLP 500. It still needs a lot of time before I bottle condition ...
