Have you tried emailing Derrin @ Brewers Hardware to see if he can still make them for you?

This is what I ended up using, I just used two of the three of the posts for the two wire probes. They work much better then the RCA connectors I was originally going to use, and they lock into place.

Also went with XLR connectors. Good choice. They're sometimess a pain to disconnect, but once they're snapped in place, they don't come loose.
