Step mash in BIAB? Not really necessary!
Here's my Hefe recipe. It also happens pretty much the exact proportions of all traditional German Hefe's. Easy breezy!
5.0 gallon batch
5.0 lbs Pilsner Malt
5.0 lbs Wheat Malt
Mash @ 153F
Boil 90 minutes (be sure to account for extra boil off!)
1.0 oz Hallertau @ 60 minutes
Ferment @ 63ish ambient for TWO WEEKS
Bottle/Keg carbonate for 2 weeks
Primary #1 - Midnight Ryeder (Midnight Wheat and Rye)
Primary #2 - Florida Weiss
Primary #3 - Kane-DOH APA (Honey Citra APA)
Secondary #1 - Downtown Flanders Brown (brewed August 2012)
Keg #1 - Raspberry Florida Weiss
Keg #2 - Cinnamon Raisin Cider
Keg #3 - NONE!
Bottled - NONE!
