I've started experimenting with 1 gallon batches to learn about variances in ingredients. I'm wondering, can I add too much yeast? Not enough? Or is it simply that yeast present eats fermentables present until there are no more fermentable present?

Also, if I got an 11g package of yeast and used 3, can the rest be refrigerated or frozen?

The short answer is you could underpitch (though you'd have to try pretty hard on a 1-gal batch), and it's really hard to overpitch.

EDIT: and yes, you can just put the leftover dry yeast pkg in a ziploc bag and store it in the fridge.

It is hard to overpitch yeast but possible. Over pitching could cause the beer to have a yeasty taste (doh), result in inefficient fermentations, thin beer, beer with "yeast bite", explosions and occasionally hair to grow on your palms. Best to stick to recommended pitching rates.
