I was lucky enough to get 3 - 20# cylinders of CO2 from an old restaurant. They are all full. I'm assuming this should still be good but I don't want to hook them up and spoil any kegs. Does this go bad?

CO2 is already oxygenated and cannot "go bad". It can be broken down into carbon and oxygen by plants. Al Gore told me so.

Is that this whole "global warming" thing he created?

haha i kid i kid

i'm glad you asked this question OP because I was wondering the same thing. My father just acquired a CO2 tank that has some gas left in it and is quite a few years old and he wasnt sure if he could use it or not.
