I'm not sure what kind of yeast (I was thinking about Australian Ale) But I hear that has a bit of a Brady character which isn't quite what I'm going for here.. Any advice on yeast or anything else about the recipe would be greatly appreciated!
You know there are NZ hops out there called Southern Cross, right? Surprised you didn't use them here.
You need a TON more late hops IMO.
I would have used Wyeast 1272. It has fruity esters and allows the hops to shine at the same time.
You don't need carapils for an extract beer, but I would've shot for 1.070 OG with about 6% C20 and 12% sugar (For a full 6 gallon boil / 5 gallons in the end with no top off water under a 60 minute boil).
Agree with bob, I would triple your late additions. I dont know about rakau, but motueka is quite mild. Very tasty, but mild. The actual nz hop called southern cross would be good here, it is very earthy, piney and pungent. Great ipa hop.
