Personally, I don't think you need to step mash. A single infusion to the conversion temperature is all you need, or want to worry about on your first all grain.

Actually if you are using fully modified malts, there is no reason to do a protien rest at all. Also, if you are batch sparging, just go a head and skip the mash out.
