I would like to try this kit from Midwest.

The instructions call for a sparging step, but I don't have the equipment as I usually do extract kits. I usually just boil my grains then toss. Is this step really required for an extract kit. What will happen if I do the boil and then toss then grains?

It's a partial mash recipe. You'll have to mash and sparge a portion of the grains before adding the extract. no big deal. That can be done in your BK with a paint strainer bag or grain bag. Heat some water to 153 or so and let sit for 30 minutes to an hour. Then rinse with some sparge water in another kettle and add that wort to the BK. Then add the extract and continue as normal.

here's how my LHBS explains Step 3: Steeping Grains - real simple, and I bet you have the equipment needed.

1. In a medium sized saucepan, heat 1 L of water to 175F and turn off heat. Add grains, cover and steep for 30 to 45 minutes.

2. When the grains have steeped for 30 minutes or more, strain through a colander, or spaghetti strainer into your kettle. You will notice the grains have soaked up most of the water. "Sparge" the grains by pouring another lire or so of hot water through them, much like drip coffee. You're done with the grains , feed them to the budgie, compost them, but whatever you do, don't put then into your kettle.

11 batches of great beer later... Go for it.
