I made this for a party and one of the attendees actually commissioned me to make ten more gallons of it for another party. Great stuff!

Grain Bill:

8 lbs. Belgian Pale Malt
1 lbs. Aromatic Malt
1 lbs. Golden Naked Oats

Mash @ 148 for 1 hour.

Hops:

.5 oz. Pacific Jade @ 60 mins
.5 oz. Pacific Jade @ 5 mins
1 oz. Motueka @ 5 mins

Yeast:

Wyeast 3711 French Saison

I pitched a 1 qt. starter @ 68. I ramped the temperature up 2 degrees each day until I hit 76 and held it there for the remainder of two weeks.
 
I made a similar beer with all Nelson, but with date sugar, and no oats. It turned out well.

Nelson is killer in a saison. I've never tried the other NZ varieties in saison, but I bet that Pacific Jade is tasty too.
