I have some washed Weizen yeast in my fridge, and I am thinking about brewing up a Kolsch this weekend. Has anyone used weizen yeast for a Kolsch and how did it turn out? Or should I just pony up the $10 for some Kolsch yeast?

It'd be more of a dampfbier. Still tasty, just different.

The only thing that really makes a Kolsch a Kolsch is, in fact, the yeast.

+1. You really need either WY2565 or WLP029 to make a Kolsch. The yeast is very unique.
