Bagged ice can have bacteria. I boil 3 gallons of tap water. freeze 1 gallon of spring water. pour wort over frozen spring water and top off with cold spring water while it sits in a ice bath. I prefer stainless steel pots over aluminum because sometimes aluminum can give off metallic flavors.

That tannic sensation on your tongue may be fusel alcohols, that come from pitching at too high a temp. Your fermenter will be a few degrees higher than ambient during active fermentation, so you were likely at 84-85 for awhile.

I would lean towards tossing near boiling liquid into a plastic bucket as a contributor to your off flavors over chlorine/chloramines.

When you pitch, the yeast goes into reproduction which creates all sorts of tasty off flavors that they will later cleanup in the conditioning phase of fermentation. Pitching too warm creates a yeast orgy w/ more off flavors that the yeast may not fully clean up later.

I would definitely buy some campden tablets to treat your water just to rule out chlorine/chloramine, chill the wort before placing it in the fermentor, and pitch below 70. That should get you a decent beer assuming your fermentation temps aren't too high (> 68'ish) and you start using starsan.

one more quick suggestion, instead of water in the airlock, I have read to use cheap vodka, that way if it does go into the wort, it causes no harm.

I use Sanitizer as its cheaper, but vodka works as well.

Well.... after a little more time in the bottle, things have mellowed out in the beer! It still tastes a bit off to me... but the astringency has gone way down. I'm wondering if it's the orange peel or coriander spices that I'm not getting along with?

Brewed my second batch the other night and took precautions not to repeat any of my mistakes from the wit!

Thanks for all of your replies and encouragement!

In the end, the most important lesson learned was RDWHAHB!

yuuuuup. that's the best thing you can do.

I had that same sort of medicinal taste in the first batch I brewed. In the end, I think it was more due to using tap water than anything else. Needless to say, I was highly disappointed after a few weeks of drinking my first homebrewed beers. I gave them another 2-3 weeks, and boy oh boy what a difference. They went from being barely ok on my palette to a friend and I killing a case in a day.

Same pots, same process, next batch with filtered water....no bad tastes.

F-it hold your nose and drink it. Its still gonna get you drunk... Im cant talk I haven't brewed yet. I bought my beer kit pic enclosed. I am waiting on money to purchase my 8 gallon stainless steel pot, my outdoor burner and a immersion chiller. Ill prob make the chiller.. And I need a good beer recipe kit. But im the type of person unless theres no alcohol in it or it tastes like miller lite. Ill drink it... Cheers!

I suggest you buy the chiller, you will probably come out cheaper or the same price and save yourself time and frustration. Check out grape, grain and bean. I bought a 50' chiller and it is awesome. Also, northern brewer makes great kits, prices are very reasonable and $7.99 flat rate shipping.
