Well it's been done-the 06'plum wine has been bottled,Thanks to everyone here for their reassurances that the excess tannin flavor would mellow-WELL IT DID !! The sample I tasted was only in Grolsch bottle bottled same time primary was racked to secondary-medeocre mouthfeel and excess tannin flavor...it must have been the fact that the bulk was finished in a 6 gallon carboy. This stuff is freakin fantastic ! it's all put to bed with the exception of about a bottles worth
and that bottle is gonzo.......
