My current plan is to age 4-5 days, taste and figure out where I want to go from there.

I mimic GinKings comments. I left mine sealed for 4 weeks then siphoned rinsing, no sanatizing, no additional bourbon....just straight in. BTW...I did a detailed writeup on my process in another post
