Default What is this white stuff

Racked my cider last weekend. Within a few days this stuff appeared.
It was a lot thicker two days ago. If you shake it it is small pieces that float. It did bubble a little for a day a few days after racking, if that matters.

It's yeast, and co2 from racking...it looks like it may even be krausening a bit. Which means fermentation was probably still going or at least stuck before you racked it and moving it kicked up the yeast and got it going again.

What is kausening and is that good or bad?

Krausen is the name for a colony of yeast that is fermenting your beer/cider/wine/mead.

Yes it good....though like I said it really should be done before you rack.

I added some more apple juice because I suspected the yeast hibernated due to temp. I guess the additional sugar and a rise in temp jump started things. I broke a lot of rules on this batch. It's gonna be cloudy but as long as its safe and tastes good it's good until the next batch is ready. Thanks.
