i made a key lime mint two months ago so i decided to taste it. and it seemed a bit heavy on the lime side. any suggestions to even out the taste?

Have you checked the pH too see if its worth adding something to reduce it, won't (probably) reduce the depth of flavour but might help by knocking down the "presence" of the lime.

Or possibly back sweeten it more, the acid taste is masked by more sugar...

Or just leave it, let it finish get of clear and just bulk age it. You may well get a recovery of the honey notes. Don't forget, its only a couple of months old right now......

My suggestion is to leave it to age the full year. Your mint will come back and the lime will soften up a bit. I had this effect when I did a Lime mead. Aging is the cure. It was sharp to the point that I woried at first.
