If your FG is where it is supposed to be and stable, I say go ahead and bottle. I have noticed when I brew wheat beers they tend to keep more CO2 in solution than my other ales. Wheat malt is high in proteins that create a nice head on the beer and that may be responsible as well.
No yeast, no beer. No beer, no civilization. Therefore, we really have yeast to thank for all our modern-day conveniences and tasty beer
