do i need to put my blow off tube in a jug of water

Yes. Putting the outlet end in water turns it into an airlock, which will keep foreign nasties from infecting your beer.

i use starsan instead of water in my blowoff bucket/jug thingy.

i guess with all that CO2 not much chance of anything climbing back thru the tube but that's just how i roll.

better than water is a sanitizer (star-san, etc) solution.

here's my latest blowoff setup. fermentation was very active when i took this picture, the escaping CO2 was creating all the bubbles in the sanitizer vessel.
