I bottled my batch today and I only had one problem. I forgot the beer. Now I have 5 gallons of bottled ambient air.

Should I dump the air out and start over or should I let it sit the compulsory 3 weeks?

Before I realized that I hadn't actually put any beer in the bottles I dumped the contents of my bottling bucket down the drain (I thought it was the last part that's bad and full of yeasties).

Help me fast!!!

Make sure to give it at least three weeks to carb up before trying any. Patience and bottle conditioning and whatnot.

I hate when people complain their bottles aren't carbed, even after 2 weeks. Just let it go the full 3 weeks before cracking one open.

Actually, I'd keep the (now empty) content of that bucket... who knows. It might be drinkable in a year from now. Relax, have a homebrew, blah blah.

I'll post the recipe once I triple filter it.

I did open a bottle today, it's not quite carbed yet. It's still holding at about 78% nitrogen...

I'm gonna J-B Weld the labels on.

Do you think I should rack it to my secondary bottles?
