Default Fermentables not fermented

What happens, out of curiousity, if you keg a beer that didn't ferment out all the way to it's final gravity, leaving "sugars" in the beer? Not that I did this or anything

It will continue to ferment as long as it is at a suitable temp...

It is not at a suitable temp...38F. I am concerned with how the human body reacts to fermentables left in the beer....I am rather windy.
