Recipe Type: Partial Mash   
Yeast: Pacman   
Yeast Starter: .25 gal   
Batch Size (Gallons): 5.25   
Original Gravity: 1.058   
Final Gravity: 1.017   
Boiling Time (Minutes): 60   
Primary Fermentation (# of Days & Temp): 4 days   
Secondary Fermentation (# of Days & Temp): ~ 3 weeks   

6.8 lbs Pale malt
1.2 lbs extra pale LME
3.6 lbs Vienna malt
2.2 lbs Honey malt

.5 oz Simcoe pellets; 60 min; 12% AA
.4 oz Simcoe pellets; 45 min
1 oz Amarillo whole leaf; 20 min; 8% AA
1 oz Amarillo whole leaf; 1 min

1 tablet whirfloc

Pacman Yeast

Mash: 45 min at 157*F (later found out that the thermometer was inaccurate; was probably more like 160 - 162*F)

FG seems high, probably from high mash temp (?)

This is the first time that I have used honey malt. I cant taste the honey, but this is a quality pale ale.

For as high as the FG is, it doesnt seem too heavy.

Poured pretty clear with a nice head that clung to the side of the glass.
