Mine finished at 1.008 using nottingham (from 1.062 I think) It's possible that you are just done. The juice should pretty much ferment dry, but there's a lot of variables involved with the different types of DMEs.
I think Graff really needs at least 3 weeks in the primary and (in my case) a month+ in bottles. I used an 8% AA Cascade and it's still a little sour. A nice soft "floral" hop works best in this one instead of something that contributes grapefruit on top of a young dry cider. (IMO)
