I want to do a cider and cold crash then pasteurize the bottles. Im having a hard time finding unpasteurized apple juice in my area. Do I even need it if im pasteurizing my bottles?

Pasteurized juice to start with is not a problem. Just make sure that in the ingredients, it only says Apple Juice and maybe Ascorbic Acid (Vitamin C). If it has preservatives, find another juice.
