So the SWMBO and I are hosting our christmas party tonight, and as per tradition, I'm making a mulled cider. This usually includes some combination of cloves, cinnamon, brown sugar, apfelwein (~9% abv), regular apple juice, and some nice spiced rum. It's delicious, especially when it simmers for a long while.
I didn't really think about this last year, and not that it is really a concern, but what kind of alcohol loss would I experience when heating the cider and also keeping it hot for an extended period of time?
I know the key temperature for alcohol vaporization is 175 F (79 C), and the rate also depends on the length of time too.

But I've also found some info that suggests it could take even longer.
In the end, it doesn't much matter to me - but has anyone had similar thoughts?
