Does anyone know the difference between white wheat and the normal malted wheat most commonly used?

It's usually red wheat, which darker and has a slightly different taste.

Totally agree.. For me, on the wheat batches I do, the red adds a wonderful taste and nose when mixed with white... about 50/50 in addition to the base 2 row grain bill. However, I've found that if you use too much it adds a kind of sweetness that is not bad, actually pretty good, but some may consider it too sweet.
