Recipe Type: All Grain   
Yeast: Wyeast 1272 American Ale II   
Yeast Starter: 2000 mL   
Batch Size (Gallons): 5   
Original Gravity: 1.080   
Final Gravity: 1.016   
IBU: 70   
Boiling Time (Minutes): 60   
Color: 7.9   
Primary Fermentation (# of Days & Temp): 15 days 65F   
Secondary Fermentation (# of Days & Temp): 13 days 68F   
Tasting Notes: Strong oak & citrus followed by sharp hop bitterness.   

This is my second attempt at a Dreadnaught clone. I had a couple problems with this beer, but it came out great. It's a simple recipe. Ferments quick, best to drink fairly young.

Problems:
1. Stuck mash (new equipment)
2. Missed my OG by .14 due to the stuck mash, expected OG was 1.094


16.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 92.8 %
1.25 lb Melanoiden Malt (20.0 SRM) Grain 7.2 %

Mash at 150F

0.50 oz Warrior [15.00%] (60 min) Hops 18.4 IBU
0.50 oz Simcoe [12.20%] (60 min) Hops 15.0 IBU
0.50 oz Centennial [10.00%] (45 min) Hops 11.3 IBU
0.50 oz Centennial [10.00%] (30 min) Hops 9.4 IBU
1.00 oz Cascade [5.50%] (20 min) Hops 8.2 IBU
0.50 oz Centennial [10.00%] (20 min) Hops 7.4 IBU
0.50 oz Centennial [10.00%] (0 min) Hops -
2.00 oz Cascade [5.50%] (Dry Hop 12 days)

American Ale II (Wyeast Labs #1272) [Starter 2000 ml]

1.5 oz Medium toast American oak cubes. I microwaved water in a Nalgene bottle, soaked the cubes until it cooled to room temperature.

...How did this turn out? I'm just getting into hoppy beers and the Idea of an oaked Dreadnaught sounds great!

In my top two beers. I drank from the keg over a two month time period and found that the oak started out very sharp, but mellowed nicely.
