Hi guys,
I want to modify my NB Chinook IPA kit. My goal is to get a little more alcohol and a little more hops into this. This is an extract kit, and i'm really new at all this so any recommendations would help.

Here's the recipe (my changes in bold)

SPECIALTY GRAIN
- 0.75 lbs Belgian Caramel Pils
- 0.25 lbs Briess Caramel 120

FERMENTABLES
- 6 lbs Pilsen malt syrup
- 1 lb Pilsen dry malt extract
- 2 lbs Light DME

HOPS & FLAVORINGS
- 1 oz Chinook (60 min)
- 0.5 oz Chinook (10 min)
- 0.5 oz Chinook (1 min)
- 1 oz Chinook (dry hop)

- 0.5 oz Chinook (10 min)
- 0.5 oz Chinook (1 min) (for a total of 1 oz additions at both 10 min and 1 min)


I'm going to do a yeast starter using WL Chico ale yeast, and let it age for 2 months.

Comments? Suggestions?

No need to let an IPA age for 2 months. Give it a couple weeks in primary and secondary then have at it! The hops will mellow over time. IPA's are best when young...

This! I love meh IPAs, but I tend to run 7 days at 65 in ferm chamber, another 7-10 in dark closet @ 70-ish, then bottle condition 7-10 and let 'er rip. Fresh, hoppy deliciousness before the aroma & flava starts to fade
