So have I ruined a batch of nut brown ale by using baker's yeast to ferment?

No you haven't ruined it. It just won't attenuate as much as if you used brewer's yeast. It might taste "bready," as well. It will still be drinkable, but you may or may not like the finished product.

The basic brewing guys did a video on switching yeasts.

They are both Saccharomyces cerevisiae, so you'll have beer. What it will taste like is anyone's guess. Attenuation and Flocculation are also question marks. It'll be beer though, no need to worry about that. I wouldn't recommend using it on a regular basis though.
