Yeast Starter: 1 gallon   
Batch Size (Gallons): 12   
Original Gravity: 1.075   
Final Gravity: 1.008   
IBU: 50   
Boiling Time (Minutes): 60   
Color: 12.5   
Primary Fermentation (# of Days & Temp): 28   
Secondary Fermentation (# of Days & Temp): nope   
Tasting Notes: Crazy apricot aroma from the hops and yeast....light bodied and decieving. Just right   

This beer kicks butt. Faint caramel flavor, awesome apricot/spicy hop flavor and aroma. Light in body and very digestive.


12.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain
6.00 lb Wheat Malt, Ger (2.0 SRM) Grain
3.00 lb Munich Malt (9.0 SRM) Grain
3.00 lb Rye Malt (4.7 SRM) Grain
2.00 lb Oats, Flaked (1.0 SRM) Grain
1.50 lb Caramunich Malt (56.0 SRM) Grain
0.50 lb Biscuit Malt (23.0 SRM) Grain
0.50 lb Special B Malt (180.0 SRM) Grain
60 min 1.50 oz Columbus (Tomahawk) [14.50 %] (60 min) Hops
60 min 4.00 lb Cane (Beet) Sugar (0.0 SRM) Sugar
25 min 0.50 oz Pearle [8.00 %] (25 min) Hops
25 min 0.50 oz Styrian Goldings [3.50 %] (25 min) Hops

I cultured yeast from a bottle of Chimay Blue. You could use WLP500 or whatever belgian style yeast you like. Heck a wit yeast would even be nice.

I think that I am going to brew this. How did the rye malt come through on this beer?

The beer is excellent, and to be honest, it keeps getting better with age. I can't really pick up the rye, but what this ale has right now, i had a bottle this weekend, is a nice spicy/fruity nose (spice from the rye maybe?) and a soft velvety mouthfeel. layers of caramel flavor as well with the smallest hint of roast there...maybe from the special B/Biscuit.

I would brew this again without hesitation.

I may pitch this on a Trappist High Grav yeast cake I am about to have from a Golden Strong I am making.

Brewed a slightly modified version of your recipe this weekend. I will let you know how it turns out in a month or so

0.5 lb Oats, Flaked

1.00 lb Corn Sugar (15 min)
0.75 oz Falconer's Flight [11.4 %] (15 min) Hops
0.50 oz Simcoe [12.2 %] (15 min) Hops

Did you do anything interesting with the oats? Cook them on the stove first?

Going to give it a shot tomorrow. Looks like a lot of fun.
