Default Is anyone planning on keeving cider this season?

I have ordered some Pectin Methyl Esterase and plan to make a batch of French style cider.

I'm wondering if there are others that plan on slow-fermenting with wild yeast and PME.

Very cool! I had never heard of it before. I will have to put that on my fun list for the future.
