I read either on Homebrewtalk or the AHA forums that someone used this: http://www.mcmaster.com/#1061t11/=e1b69u and inserted a thermometer to read the temps. There was a full write up but I only bookmarked the part.

Check THIS out. Cheap, easy, works. What more could you ask for?

I converted my hd cooler to a stainless steel liner instead of plastic so it would be really easy to install any kind of fittings you would want too. Here is the link http://www.homebrewtalk.com/f11/my-new-mash-tun-268370/

I have almost the same setup. I have a thermocouple in a SS thermowell instead of a digital quick-read thermo, but it's essentially the same. I used a little keg lube so that I could jam the stopper in really well. I've never had any leaking problems.
