Hello,

My only real experience with cider is making edworts apfelwein, and I really enjoyed it.

I want to dig deeper and learn more about cider craft. Not just the ingredients, but process considerations etc.

For instance, should I be monitoring my fermentation temp with this kind of yeast? Do I need to think about adding nutrition? it seem like apples might have alot less amino acids etc..

Can anyone recommend a book or two where I can start? I would like a few reference ranging from cultural/history to science/practice

Thanks!

So far I've found a nice website with beginner info:
http://www.makinghardcider.com

The website references two books:
-Craft Cider Making
-Cider: Hard and Sweet

For English style craft cider info you can look at Andrew Lea's site cider.org.uk/
He also has a book "Craft Cider Making"

+1 on Ben Watson's book Cider, Hard and Sweet: History, Traditions and Making Your Own.

Also, you can hear an interview with Ben Watson on Basic Brewing Radio www.basicbrewing.com
