Default Vanilla Sweet Stout

So, i did this:

Recipe: O'Brandigan's Vanilla Stout
Brewer: Brandon Martin
Asst Brewer:
Style: American Stout
TYPE: All Grain
Taste: (35.0)

Recipe Specifications
--------------------------
Batch Size: 5.00 gal
Boil Size: 6.00 gal
Estimated OG: 1.060 SG
Estimated Color: 31.0 SRM
Estimated IBU: 16.9 IBU
Brewhouse Efficiency: 80.00 %
Boil Time: 60 Minutes

Ingredients:
------------
Amount Item Type % or IBU
0.30 lb Rice Hulls (0.0 SRM) Adjunct 2.84 %
6.02 lb Pale Malt (2 Row) US (2.0 SRM) Grain 56.87 %
1.00 lb Barley, Flaked (1.7 SRM) Grain 9.48 %
1.00 lb Cara-Pils/Dextrine (2.0 SRM) Grain 9.48 %
0.75 lb Roasted Barley (300.0 SRM) Grain 7.11 %
0.50 lb Chocolate Malt (350.0 SRM) Grain 4.74 %
1.00 oz Goldings, East Kent [5.00 %] (60 min) Hops 16.9 IBU
1.00 items Vanilla Beans (Secondary 5.0 min) Misc
1.00 lb Corn Sugar (Dextrose) (0.0 SRM) Sugar 9.48 %
1 Pkgs Irish Ale (White Labs #WLP004) Yeast-Ale

Mash Schedule: Single Infusion, Medium Body, Batch Sparge
Total Grain Weight: 9.58 lb
----------------------------
Single Infusion, Medium Body, Batch Sparge
Step Time Name Description Step Temp
60 min Mash In Add 11.98 qt of water at 165.9 F 154.0 F

And in the process of chilling with my immersion chiller i managed to gain 2 gallons because of a trickle leak in the dang wort chiller, after the boil was finished. My gravity reading came in at 1.030. The OG hyrdo sample i took tasted like water-porter.

Am I screwed?

Any other opinions? I can't add too much more volume because i'm already at 5 gallons in the fermentor and the capacity is 6.5 gallons...
