Default general wine making instructions?

i noticed there weren't any stickies for this wine forum for general instructions on how to make good wine.. i've made one batch before, but it was a while ago and i am looking to make a white and a red in the near future.. i know they have instructions on the kits, though i don't think they go into details on using gelatin or other items like that on how to make the best of the ingredients you get in the kit..

~ A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

Stainless Hop Spider | Wooden Brew Rig | Dual Hinge Keezer Build

Primaries: Apfelwein, Nugget Nectar, Brinner, Sticky Red, Smoked IPA
Keg 1: Nugget Nectar Clone | Keg 2: Brinner | Keg 3: Oaked Bourbon Vanilla Porter
Bottles: lots full and even more empty

If you are using a kit, they come complete with everything including finings. Usually, the kits have bentonite and/or Super-Kleer. The instructions for good kits are perfect, and never require tweaking.

If you're starting from scratch, here's my favorite site on winemaking:
