When figuring my grain bill (especially how many pounds I'll be mashing) do I factor in my LME? BeerSmith seems to be....

malt extract doesn't get mashed, so no. You only factory in the grains that you'll actually be mashing in the grain bill.

I presume you mean in regards to mash water and sparge water? That only relates to the actual grains that you have.

beersmith seems to be what?

You have to determine how much fermentables you will get from the grain and add enough extract to hit your target gravity.
