I have a braggot recipe that recommends substituting a mash of:
8 lbs pale ale malt
2 lbs Vienna malt
1 lb dextrin malt

With 6 lbs amber dme.

I was hoping to at least steep some grains to add to this (i really like that part of brewing beer, it makes me feel like I'm really doing something) any suggestions for what I should do? I was thinking I replacing some of the amber dme with pale dme and steeping some caramel malt. Any thoughts?

Amber DME is a mix of pale malt, munich, and usually crystal 60L.

You could steep the dextrin.

I was sitting here tonight scratching my head trying to figure out the same problem. 6 lbs of DME just sounded too boring to me.Thank-you AZ-IPA for your answer it will help me out as well. I can always count on Homebrew talk to find a answer to my questions.
