Default Smoked Hefe 1st all grain batch

Well it could be great or it might just plain suck,but here is my 1st try at all-grain wish me luck,I was in Bamberg Germany and had a summer smoked hefe
and thought I would bring it to AZ!!

5 1/2# Pale Wheat Weyermann
4 # Plisner malt Weyermann
.75# Smoked Malt Weyermann
.25 Caramel Wheat 45L
.25 Honey Malt 25 L
1# Rice hulls
1oz Tettnang
WLP 380



Reason: Left out PH Level 5.0

I just did a smoked american wheat with 8oz of the Briess cherrywood smoked malt and I found it was just a touch too little. It was hopped up a bit so maybe that's what was hiding it. All in all I liked the whole smoked wheat thing, never did try it when I lived in the old country though. Let us know how it turns out!
