I have surveyed this thread many times but could never think of a a great reply......till now.
This morning
I had a dream about removing labels and washing bottles.

Maybe it was a nightmare.

When you run into a fledgling homebrewer who after his first all extract batch (still in the fermenter) is thinking of opening a brewery and you have to hold your tongue about what an undertaking it will be and that he really should get several more batches below his belt before he even considers going that route.

convince him that opening an LHBS is a better idea.

Like I said I held my tongue. I did invite him over for a brew day because it is always nice to have an extra pair of hands and I really enjoy teaching. I will introduce him round once I get him to join up to my best resource when it came to learning brewing.

I've run into a few of those while doing transactions off craigslist...

One was for sure bipolar... I've never met a person who talked like this guy. He would say something, you would try to add to it, he would interrupt you and change the topic to something totally different... every time. Man I couldn't imagine being friends with him. He was exhausting, but he feels he's going to get a brewery up and running and take over the world.... the IPA he left me would beg to differ.

Met another one who was working on starting a meadery. Nice kid, hope he does make it. But the bottle he gave me was FOUL. It was so bad, I have to think it got infected or something happened. It was super hot and hoochy, and it tasted like old gym socks soaking in cheap white wine. He did say they were getting some interesting flavors, I would agree... very interesting.

I know several professional brewers from several breweries

Pyramid (****ty company oh the horror stories I've heard about them)
Bridgeport
Widmeier
Base Camp (a newer one)
to name a few...

It can totally be done, and it can be hugely rewarding. But it's a whole other level going commercial. The expense is high. It takes a lot of capital and a lot of hard work. And you can't afford to have an infected batch, or you're out thousands of dollars.

It's fun to dream and think about it, but there are so many hidden nightmares that tend to get over looked when dreaming...
