Welcome.

Nope.. 3 weeks is fine, in fact it gives the yeast time to clean up their mess. They've pretty much proven that autolysis is not an issue. I leave all my IPA's in primary for at least 2 weeks, and then just dry hop right in the primary for another week. Cold crash after that, then package. I get SUPER clear beers, with just whirlfloc in the boil.

Rebel Brewer has them. Northern Brewer just got in a shipment of full cone Simcoe, but no pellets yet. Check Hops Direct too

I had to drive an hour to the HBS on the other side of Houston for them. But man do they smell good! Just bottled it today and even flat it tastes AMAZING.

Did you go to B&S or DeFalco's? I've never actually gpne to DeFalcos, but I'm considering it since they actually carry Wyeast.

Thanks, this is the best beer I ever made thanks to Yooper. I purchased Simcoe hops at my LHBS for the first batch. Went back to get some more for a second, and they were out of them. Told me they couldn't get them anymore.
