I use it on every beer. It will pull the suspended proteins to the trub, eithe during whirlpool or in the fermenter. Dark beers need clarity too.

But isn't part of the appeal of a weizen the cloudyness?

Yes but the yeast is what is wanted in suspension, not protein or nasties.

exactly - whirflock doesn't bind to yeast. I use it on every beer also.
