Also, being kind of new to this, on a counterflow, would I need a pump or could I work one off of a racking cane siphon? My current kettle setup doesn't have a valve.
A five gallon bucket might work well if it fits inside your kettle. Otherwise, maybe a one gallon paint can?
You can siphon feed a counterflow chiller just fine, but it takes a little effort to get the siphon going since you have a very long length of tubing to deal with. Since it's already set up, and it seems that you have limited resources available, I recommend just bending the existing immersion chiller to suit your needs rather than converting it to a CFC.
