What's a reasonable amount of time between bubbles in the airlock for me to say "this is done"? Right now my cider and lemonade are both looking at something like 1-2 per minute.

also, another question, will aging mellow a slightly stronger-than-I-want clove flavoring? I think I put 1 too many in!

I would not use the airlock as a reliable measure of fermentation. I would use a hydrometer and wait until the cider reaches stable readings (around 1.000) over a few days.

Yes, aging will mellow the the clove! Although, you might be waiting a bit.
