Good alternative to the normal bbq chicken... my wife was pleased, anyway.

Pound flat (I use a rubber mallet), layer with prosciutto, provolone, and large basil leaves. Roll up, tie with twine, and cook over coals and some mesquite.

Looks great! I do a similar sort of thing, using goat cheese and herbs as the filling. Prosciutto, provolone and basil sounds great!
