Hey guys I want to make a lemon lime beer. I am aiming for a light refreshing summer beer I want to start with a blue moon clone from BierMuncher. I know you would remove the coriander and orange peel. Does anyone have any ideas for the lemon and lime flavorings and the hops for a 5gal batch.


3.00 lb Extra Light Dry Extract (3.0 SRM)
1.00 lb Wheat Dry Extract (8.0 SRM)
2.00 lb Wheat, Flaked (1.6 SRM)

1.49 oz Goldings, East Kent [5.00%] (60 min)

0.75 oz Coriander Seed (Boil 10.0 min) Misc
0.75 oz Orange Peel, Bitter (Boil 10.0 min) Misc

1 Pkgs Belgian Witbier (Wyeast #3944 or White Labs WLP400)

Hmm... I'm not a big fan of wits so if I were making a lemon-lime beer, I'd probably use something like Northern Brewer's Patersbier as a base beer. I'd add fresh-squeezed lemon juice to the cooled wort before pitching the yeast at a rate of 1/2 lemon per gallon of wort. Then after primary fermentation is complete, I'd make a homemade teabag with lemon and lime zest, and throw that into secondary, and rack the beer onto it. Age to taste. I"d probably have to experiment some to figure out the proper amounts.

Don't add juice, add zest. I say the zest of two whole lemons and limes at flame out and then steep some zest in vodka for the duration of primary to make an extract. If it's needed, add some of it at bottling or kegging time.
