So I brewed a blonde ale a while back and after bottling it had a strong creamed corn/vegatal taste to it, I did not sample it before I bottled. But it seems this off flavor has mostly dissappeared after being in the bottle for six weeks or so? Any idea where I went wrong and how it fixed itself? this was my second time brewing this same recipe and the first time it was amazing and its good now but I don't have any of the first batch to compare it to. Also is it safe to say that all the bottles have righted themselves from the off flavor I have drank about six or so since I found it to be relatively fixed?

Without more oinformation it is hard to say why the difference.

I would suggest that if it tastes good now...and you have drank some and like it....drink the rest!

brew it again and keep very DETAILED notes......

I am sure some others will have better advice....

Please post the recipe. If you used pilsner malt I would imagine DMS is the culprit.

sounds like DMS.. a 90 minute boil helps. When you boiled, did you have anything covering the pot?

Also, quickly cooling the wort helps reduce DMS in the finished beer. Was your cooling time over 15-20 minutes?
