I am going to be brewing an extract/specialty grain brew here in a little while and my question is if I have already had my grain that I will be steeping cracked, how long will it stay fresh? Is it's shelf life less since it has been cracked? Should I refrigerate it? I would like to start the batch in about a week, but if I should start it now for freshness i possibly could.

The question is how long do you want it to keep?
Like any fresh food it will degrade from the time it stops growing.

Days are fine.
Weeks it'll probably loose some freshness.
Months and it'll probably suffer.
Years and it will suffer.

But just brew when you need to and your beer will still be better than most of the commercial swill.

Refrigerate it. Realistically, cracked grains are good for no more than a month unless you freeze them.

I have a 6.5 gallon carboy. If I make a five gallon batch of beer and put it into a 6.5 gallon carboy do I even need to use a blow over tube? Can i just use an airlock?
