The C-Note would probably be fairly straight forward to clone. 7 "C" Hops, 100 IBU's, pinch of crystal for color, maybe a little bit of vienna. A FWH, continuous hopping, and dry hopping would probably work great on this beer.
Now their specialty ale...Epic. But I wouldn't really know where to even start to clone it.
