I replaced all my plastic and boiled my racking cane, in case my bad bitters was contaminated by sour bugs. I mashed in my bottling bucket once, so replacement for peace of mind.

Prizes were shipped today. I know I said I would send one each of my 999, 101010, and 111111 but I only had a couple 999s left and I'm keeping those! So in addition to the 101010 and 111111 I sent a big holiday ale that I really like. It's good not at the holidays too. Let the 111111 sit at room temp for at least a month or wait until 11/11/11 to drink it. I primed it with a little s-04 so I think it's probably already carbed but letting it sit a while would probably just let it get even better. Also Randar, there's BYOBRA in the box so don't throw the box away without grabbing it first! Here's the rundown so you'll know what you're drinking.

10-10-10 - Last year's HBT anniversary-series beer. An over-the-top Belgian Golden Strong. Mine came in at like 14% ABV so watch out! It got a silver in the HBT comp for specialty ales.

11-11-11 - This year's HBT anniversary-series beer. An old ale aged with Brettanomyces and french oak. Simple malt bill of pale, amber and brown malts combined with a bit of blackstrap molasses and some kettle caramelization. Taste is anything but simple though.

Holiday Ale - A hodgepodge of leftover grains thrown together for a Belgian Dark Strong base lightly spiced, oaked, and rummed. Smooth, thick and decadent, but not sweet or cloying. You don't have to wait to Christmas to drink this spiced ale. It's won several medals.

Awesome! Thanks Brian! I swear I will get that ESB stuff posted by the end of this week. Haven't found the time after realizing how long it took to document & post the best bitter properly.
